For the Quesadilla:

  • 2 medium flour tortillas

  • ½ cup fresh or frozen blueberries

  • ¼ cup cream cheese or mascarpone, softened

  • 12 tsp honey or maple syrup (optional)

  • ¼ tsp cinnamon

  • 1 tbsp butter or cooking spray

Optional Add-Ins:

  • 1 tbsp chopped nuts (walnuts, almonds, or pecans)

  • 2 tbsp granola for crunch

  • Sliced banana or apple for extra fruit

For Topping:

  • Powdered sugar (for dusting)

  • Greek yogurt or whipped cream (for dipping)

  • Extra blueberries or fruit on the side


Instructions

Step 1: Mix the Filling

  1. In a small bowl, combine cream cheese, honey or maple syrup (if using), and cinnamon.

  2. Mix until smooth and creamy.

Step 2: Assemble the Quesadilla
3. Spread the cream cheese mixture over one tortilla.
4. Sprinkle blueberries evenly on top.
5. Add any optional nuts or granola.
6. Top with the second tortilla and press down gently.

Step 3: Cook the Quesadilla
7. Heat a nonstick skillet over medium heat and melt butter or spray lightly.
8. Place the quesadilla in the skillet and cook for 2–3 minutes until golden brown.
9. Carefully flip and cook the other side for another 2–3 minutes.

 

Step 4: Serve & Enjoy
10. Transfer to a cutting board and let cool for 1 minute.
11. Slice into wedges.
12. Dust with powdered sugar and serve with yogurt or whipped cream.

Notes

Use Softened Cheese – Easier to spread and blends smoothly.
Don’t Overstuff – Helps the quesadilla stay together when flipping.
Cook on Medium Heat – Prevents burning before the filling melts.
