Ingredients

Scale
  • 4 ounces unsalted butter (cold)
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon + 1 teaspoon baking powder
  • 1/2 cup whole blueberries (fresh)
  • 1 cup buttermilk
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 475°F (reduce to 450°F for dark baking sheets) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine flour, salt, and baking powder. Grate the cold butter into the mixture and mix well. Chill in the freezer for 10 minutes.
  3. Gently fold in the blueberries, then pour in the buttermilk. Stir about 15 times until just combined.
  4. Transfer the dough to a floured surface and knead lightly until smooth. Roll out to a rectangle about 3/4-inch thick.
  5. Fold the dough in half multiple times, then roll out again to the same thickness.
  6. Cut out biscuits using a biscuit cutter and place them on the prepared baking sheet.
  7. Bake for approximately 13-15 minutes until golden brown around the edges.
  8. For icing, whisk together heavy cream and powdered sugar until smooth, then drizzle over warm biscuits before serving.
