Ingredients
For the Puff Pastry Twirls:
-
1 sheet puff pastry (thawed if frozen)
-
½ cup crumbled blue cheese
-
⅓ cup chopped toasted walnuts
-
1 tsp fresh thyme leaves (or ½ tsp dried)
-
1 tbsp honey (optional, for a touch of sweetness)
-
1 egg (for egg wash)
-
1 tsp water
Optional Garnishes:
-
Extra thyme sprigs
-
Flaky sea salt
-
Cracked black pepper
-
Drizzle of honey before serving
Instructions
Step 1: Preheat & Prepare Pastry
-
Preheat oven to 400°F (200°C).
-
Line a baking sheet with parchment paper.
-
Lightly flour a work surface and gently roll out the puff pastry to smooth and slightly stretch, keeping it roughly rectangular.
Step 2: Add the Filling
-
Evenly sprinkle the surface of the puff pastry with blue cheese crumbles, chopped walnuts, and fresh thyme.
-
If using honey, lightly drizzle over the filling.
-
Gently press the toppings into the pastry with your hands or a rolling pin so they stick.
Step 3: Fold and Slice
-
Fold the pastry sheet in half lengthwise (like a book) to enclose the filling.
-
Press lightly to seal.
-
Using a sharp knife or pizza cutter, slice the folded pastry into strips about 1 inch wide.
Step 4: Twist & Arrange
-
Carefully twist each strip several times to create a spiral and place on the baking sheet.
-
Leave some space between each for puffing.
Step 5: Egg Wash and Bake
-
In a small bowl, whisk together the egg and water.
-
Brush each twirl lightly with the egg wash.
-
Bake for 15–18 minutes, or until puffed and golden brown.
Step 6: Cool & Serve
-
Let cool slightly on the baking sheet.
-
Serve warm or at room temperature with extra thyme, a sprinkle of sea salt, or a light honey drizzle if desired.
Notes
Keep Pastry Cold – Work quickly so the dough stays firm and easy to handle.
Use Good-Quality Blue Cheese – The flavor really shines through.
Toast the Walnuts – Enhances their nutty flavor and crunch.
Don’t Overfill – A light hand helps prevent the twirls from bursting open.
Serve Fresh – Best the day they’re baked, but still tasty the next day!
