Ingredients
For the Blackberry Filling:
-
4 cups fresh or frozen blackberries (if frozen, do not thaw)
-
¾ cup granulated sugar
-
1 tbsp lemon juice
-
1 tbsp cornstarch (or flour)
-
½ tsp vanilla extract
-
Pinch of salt
For the Cobbler Topping:
-
1 cup all-purpose flour
-
1 tsp baking powder
-
½ tsp baking soda
-
¼ tsp salt
-
6 tbsp unsalted butter (cold and cubed)
-
¾ cup buttermilk (or milk + 1 tsp lemon juice as a sub)
-
2 tbsp granulated sugar (for topping)
Optional Add-ons:
-
Vanilla ice cream or whipped cream
-
A pinch of cinnamon in the batter for a spiced twist
Instructions
Step 1: Prepare the Blackberry Filling
-
Preheat your oven to 375°F (190°C).
-
In a large bowl, mix blackberries with sugar, lemon juice, cornstarch, vanilla, and salt.
-
Gently stir to coat the berries, then pour the mixture into a greased 9-inch baking dish or skillet.
Step 2: Make the Cobbler Topping
-
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
-
Add cold cubed butter and cut it into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
-
Pour in the buttermilk and stir just until combined (do not overmix).
Step 3: Assemble the Cobbler
-
Drop spoonfuls of the batter over the blackberries—it’s okay if some berries peek through.
-
Sprinkle the 2 tbsp sugar over the top for a golden, crisp finish.
Step 4: Bake Until Golden and Bubbling
-
Bake for 35 to 40 minutes, or until the top is golden brown and the filling is bubbling around the edges.
-
If the top browns too quickly, loosely cover with foil for the final 10 minutes.
Step 5: Cool & Serve
-
Let cool for at least 15 minutes before serving—this helps the filling thicken.
-
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use Cold Butter – This creates a tender, biscuit-like topping.
Don’t Overmix – Mix the batter just until it comes together to keep it light.
Fresh or Frozen – Both work well, just don’t thaw frozen berries first.
Taste the Berries – If they’re very tart, you can add an extra tablespoon of sugar.
Add Texture – A sprinkle of coarse sugar gives a nice crunch on top.
