Ingredients
For the Filling:
-
2 cups cooked chicken, shredded or cubed
-
1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
-
1 can (10.5 oz) cream of chicken soup
-
½ cup chicken broth
-
½ tsp garlic powder
-
½ tsp onion powder
-
Salt and pepper to taste
For the Bisquick Topping:
-
1 cup Bisquick baking mix
-
½ cup milk
-
1 large egg
Optional Add-Ins:
-
¼ tsp dried thyme or rosemary for extra flavor
-
1 cup sautéed mushrooms
-
½ small onion, finely chopped and sautéed
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Lightly grease a 9-inch pie dish or baking dish and set aside.
Step 2: Mix the Filling
In a medium bowl, combine shredded chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
Mix until everything is evenly coated and well combined.
Step 3: Assemble the Filling
Pour the chicken mixture into the prepared pie dish. Spread it out into an even layer with a spatula.
Step 4: Prepare the Bisquick Topping
In a separate bowl, whisk together Bisquick, milk, and egg until smooth.
Pour the mixture over the chicken filling and spread gently with a spoon or spatula to cover as much as possible. Don’t worry if a few spots show through—it will spread as it bakes.
Step 5: Bake
Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the filling is bubbling around the edges.
Let rest for 5 minutes before serving to allow the filling to settle.
Notes
Use Rotisserie Chicken – Saves time and adds flavor.
Thaw Veggies First – If your frozen mix is clumpy, thaw and drain for even cooking.
Go Creamy – Add a splash of milk to the filling if you want it even richer.
Add Herbs – Fresh or dried herbs like thyme, parsley, or rosemary enhance the flavor.
Check Doneness – If the top browns too quickly, tent with foil during the last 10 minutes of baking.
