2 tbsp fresh cilantro or parsley, chopped

⅓ cup BBQ sauce (use your favorite brand)

Instructions
Step 1: Preheat Grill or Oven
Grill: Preheat to medium-high (about 400°F).
Oven: Preheat to 400°F (200°C).
Step 2: Mix the Shrimp & Veggies
In a large bowl, combine shrimp, mango, bell pepper, red onion, olive oil, BBQ sauce, lime juice, garlic powder, smoked paprika, salt, and pepper.
Toss gently until everything is evenly coated.
Step 3: Assemble the Foil Packets
Tear 4 large sheets of heavy-duty foil (about 12 x 18 inches).
Divide the shrimp and veggie mixture evenly between the sheets.
Fold each packet by bringing the long sides together and sealing tightly, then folding in the ends to fully enclose.
Step 4: Cook the Packets
Grill: Place packets on the grill, cover, and cook for 10–12 minutes, turning once halfway through.
Oven: Bake on a baking sheet for 15–18 minutes, or until shrimp are pink and cooked through.
