Instructions
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Lightly grease a baking dish with butter or non-stick spray.
Step 2: Make the Banana Filling
In a skillet over medium heat, melt the butter.
Add brown sugar, maple syrup, cinnamon, vanilla, and a pinch of salt.
Stir until the mixture is smooth and bubbling, about 2–3 minutes.
Add the sliced bananas and gently stir to coat.
Cook for 2 minutes until just softened.
Pour the banana mixture into the prepared baking dish.
Step 3: Make the Cobbler Topping
In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or fork until the mixture looks like coarse crumbs.
Stir in the milk and vanilla extract until just combined.
Be careful not to overmix; the dough should be thick but slightly lumpy.
Step 4: Assemble the Cobbler
Drop spoonfuls of the cobbler topping evenly over the banana filling.
It’s fine if some of the filling peeks through!
Step 5: Bake
Bake for 30–35 minutes, or until the topping is golden brown and cooked through.
A toothpick inserted into the topping should come out clean.
Step 6: Serve
Let cool for a few minutes, then serve warm with a big scoop of vanilla ice cream or a dollop of whipped cream.
Notes
Use Ripe Bananas – For the sweetest, richest flavor.
Don’t Overmix the Topping – Keeps it tender and fluffy.
Serve Warm – It’s best enjoyed fresh out of the oven with melty ice cream.
Customize – Add nuts or a drizzle of caramel for extra decadence.
Store Leftovers Properly – Cover and refrigerate to enjoy later.
