Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • ⅓ cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 24 oz cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 cup mashed ripe bananas (about 2 medium bananas)

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • 2 tbsp all-purpose flour

  • ½ tsp ground cinnamon

For the Caramel Nut Topping:

  • ½ cup caramel sauce (store-bought or homemade)

  • ½ cup chopped pecans or walnuts

  • 1 banana, sliced (for garnish, optional)

Optional Garnishes:

  • Whipped cream

  • Extra caramel drizzle

  • Toasted nuts

Instructions

Step 1: Prepare the Crust
Preheat your oven to 325°F (165°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8-10 minutes, then set aside to cool slightly.

Step 2: Make the Cheesecake Filling
In a large bowl, beat the cream cheese and sugar until smooth and fluffy.
Add the eggs one at a time, beating well after each addition.
Mix in the mashed bananas, vanilla extract, and sour cream.
Add the flour and cinnamon, mixing just until combined.

Step 3: Bake the Cheesecake
Pour the filling over the cooled crust and smooth the top.
Place the springform pan on a baking sheet and bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Step 4: Chill the Cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.

Step 5: Add the Caramel Nut Topping
Once chilled, drizzle caramel sauce over the top of the cheesecake.
Sprinkle with chopped pecans or walnuts.
Garnish with banana slices and whipped cream if desired.

Step 6: Slice and Serve
Use a sharp, warm knife for clean slices.
Serve chilled and enjoy every decadent bite!

Notes

Use Room Temperature Ingredients – This ensures a smooth, creamy filling.
Don’t Overmix – Mix just until combined to prevent cracks.
Bake in a Water Bath (Optional) – For an ultra-creamy texture without cracks, wrap the pan in foil and bake in a water bath.
Cool Gradually – Cooling in the oven helps prevent the cheesecake from sinking or cracking.
Top Before Serving – Add bananas and caramel just before serving to keep them fresh.
