  • 1 pound asparagus (trimmed)
  • 1 pound large raw shrimp (peeled, deveined)
  • 1 tablespoon garlic (minced)
  • 2 tablespoons chicken stock
  • 2 tablespoons lemon juice
  • ¼ cup unsalted butter (cubed)
  • Kosher salt, black pepper, crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F.
  2. Cut four pieces of heavy-duty aluminum foil about 18 inches long.
  3. Distribute trimmed asparagus evenly among the foil pieces.
  4. In a mixing bowl, combine shrimp with garlic, salt, pepper, and optional red pepper flakes.
  5. Place seasoned shrimp on top of the asparagus in each packet.
  6. Drizzle each packet with chicken stock and lemon juice; add butter cubes.
  7. Seal the foil packets tightly and place them seam-side up on a baking sheet.
  8. Bake for 15–20 minutes until shrimp are opaque pink and curled.
