  • 1 1/3 cup all-purpose flour
  • 1 ½ tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp Kosher salt
  • ½ cup granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2/3 cup whole milk
  • ¼ cup unsalted butter (melted)
  • 2 tsp apple cider vinegar
  • 1 medium apple (peeled and diced)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease muffin cups with vegetable oil.
  2. In a bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk together eggs, milk, and vanilla extract. Gradually mix in dry ingredients until smooth.
  4. Stir in melted butter followed by diced apples and apple cider vinegar.
  5. Fill greased muffin tins until about half an inch from the top.
  6. Bake for 18–20 minutes or until golden brown; cool for five minutes before transferring to a wire rack.
  7. Combine powdered sugar with milk or water to make the glaze; drizzle over warm fritters.
