For the Meatloaf:

  • lbs ground chicken

  • ½ cup breadcrumbs (or almond flour for low-carb)

  • 1 egg

  • 3 green onions, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp soy sauce or tamari (for gluten-free)

  • 1 tbsp hoisin sauce

  • 1 tsp sesame oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the Glaze:

  • 2 tbsp hoisin sauce

  • 1 tbsp soy sauce

  • 1 tbsp honey or maple syrup

  • 1 tsp rice vinegar

  • ½ tsp sesame oil

Optional Add-ins:

  • ¼ cup finely chopped water chestnuts for crunch

  • 1 small grated carrot for a hint of sweetness

  • Red pepper flakes for a little heat


Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C).
Lightly grease a loaf pan or line it with parchment paper for easy removal.

Step 2: Make the Meatloaf Mixture
In a large bowl, combine the ground chicken, breadcrumbs, egg, green onions, garlic, ginger, soy sauce, hoisin sauce, sesame oil, salt, and pepper.
Mix gently until just combined—don’t overmix to keep the meatloaf tender.

Step 3: Shape and Bake
Transfer the mixture to the loaf pan and shape it into a smooth loaf.
Bake uncovered for 30 minutes.

Step 4: Prepare the Glaze
While the meatloaf is baking, whisk together the hoisin sauce, soy sauce, honey, rice vinegar, and sesame oil in a small bowl.

Step 5: Glaze and Finish Baking
After 30 minutes, brush the meatloaf generously with the glaze.
Return to the oven and bake for another 15–20 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6: Rest and Serve
Let the meatloaf rest for 5–10 minutes before slicing.
Garnish with extra green onions or sesame seeds if desired.
Serve with steamed rice, stir-fried vegetables, or a simple Asian-style salad.
