  • 1 ¼ cup heavy cream
  • 1 ¼ cup full-fat milk
  • 2 tablespoons honey
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 3 large apples, peeled and diced
  • 3 tablespoons water
  • 3 tablespoons sugar (for compote)
  • ¼ cup raisins
  • ¾ teaspoon ground cinnamon
  • ¼ cup chopped toasted pecans or walnuts
  • Crumble waffle cones (optional)

Instructions

  1. Freeze the ice cream maker bowl for at least 16 hours.
  2. In a small bowl, mix sugar and cornstarch; set aside.
  3. In a large saucepan, combine milk, heavy cream, and honey over low heat until simmering. Gradually whisk in the sugar-cornstarch mixture and cook for about three minutes until slightly thickened. Remove from heat.
  4. Let the mixture cool before refrigerating for at least six hours or overnight.
  5. In a small saucepan, combine diced apples, sugar, water, cinnamon, and raisins. Cook on low heat for approximately 45 minutes until soft; let cool before refrigerating.
  6. Churn the cooled mixtures in an ice cream maker according to instructions (20-30 minutes).
  7. Transfer to a freezer-safe container and freeze for several hours before serving.
