  • 1 teaspoon pure vanilla extract
  • 6 tablespoons unsalted butter, melted
  • 2 cups finely diced apples (Golden Delicious or yellow apple)
  • 1/2 cup unsalted butter (melted) for topping
  • 3/4 cup granulated sugar for topping
  • 2 teaspoons ground cinnamon for topping

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a greased muffin tin with liners.
  2. In a bowl, whisk together the flour, baking powder, salt, and cinnamon.
  3. In another bowl, combine the brown sugar, eggs, milk, vanilla extract, and melted butter until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Toss diced apples with the remaining flour and fold them into the batter gently.
  6. Fill each muffin liner three-quarters full and sprinkle with the topping mixture.
  7. Bake for about 15 minutes or until golden brown. Allow to cool slightly before serving.
