Ingredients

Scale
  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F. Prepare a 9-inch square baking dish by greasing it and lining with parchment paper.
  2. In a large sauté pan, bring apple cider to a boil and reduce it by half (about five minutes). Add diced butter and whisk until melted.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until well combined.
  4. Gradually incorporate the reduced apple cider mixture into the wet ingredients.
  5. Fold in the all-purpose flour gently until just combined to keep the cake tender.
  6. Pour batter into the prepared dish and bake for 22–25 minutes or until golden brown.
  7. Allow cooling slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
  8. Use parchment to lift the cake from the pan; let it cool completely before slicing.
