For the Sauce:

1 can (10.5 oz) cream of chicken soup

1 block (8 oz) cream cheese, softened

½ cup chicken broth

½ cup sour cream or plain Greek yogurt

1 tsp Italian seasoning

Instructions
Step 1: Cook the Chicken
Cut chicken into bite-sized chunks or keep whole, depending on preference.
Heat olive oil in a large skillet over medium heat.
Season chicken with garlic powder, onion powder, salt, and pepper.
Cook for 4–5 minutes per side (if whole) or 6–8 minutes total (if cubed), until browned and cooked through.
Remove from pan and set aside.
Step 2: Make the Sauce
In a saucepan over medium-low heat, add butter and melt.
Stir in cream cheese and whisk until smooth and creamy.
Add cream of chicken soup, chicken broth, sour cream (or Greek yogurt), Italian seasoning, and paprika.
Stir continuously until the sauce is well combined and heated through, about 5 minutes.
Do not boil. Adjust consistency with a splash more broth if needed.
Step 3: Combine Chicken and Sauce
Return the cooked chicken to the skillet.
Pour the cream sauce over the chicken and gently mix.
Simmer on low for 5–7 minutes, allowing the chicken to absorb the flavor and the sauce to thicken slightly.
Step 4: Serve Over Rice
Scoop warm rice onto plates or bowls.
