For the Dough:

  • 3 cups all-purpose flour

  • 2¼ tsp (1 packet) instant yeast

  • ½ tsp salt

  • ¾ cup warm milk (110°F)

  • 1 egg

For the Almond Cinnamon Filling (Frangipane-Style):

  • ½ cup almond flour

  • ¼ cup softened unsalted butter

  • ¼ cup sugar

  • 1 egg

  • 1 tsp cinnamon

  • ½ tsp almond extract (optional)

For the Topping:

  • ¼ cup sliced almonds

  • 1 egg yolk + 1 tbsp milk (for egg wash)

For the Glaze:

  • ½ cup powdered sugar

  • 1 tbsp milk or cream

  • ½ tsp vanilla or almond extract


Instructions

Step 1: Make the Dough

  1. In a mixing bowl, combine warm milk, yeast, and sugar. Let sit for 5 minutes until foamy.

  2. Add egg, melted butter, and vanilla. Stir to combine.

  3. Mix in flour and salt, kneading by hand or with a mixer for 8–10 minutes until smooth and elastic.

  4. Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.

Step 2: Make the Almond Filling
5. In a bowl, cream together almond flour, softened butter, sugar, egg, cinnamon, and almond extract until smooth.
6. Set aside or refrigerate if preparing ahead.

Step 3: Roll and Fill
7. Punch down the dough and roll it into a rectangle (about 12×16 inches).
8. Spread the almond-cinnamon filling evenly over the surface.
9. Roll up the dough tightly from the long edge, like a jelly roll.
10. Slice into 12 equal rolls and place in a greased baking dish.

Step 4: Second Rise
11. Cover with a towel and let rise for another 30–45 minutes, until puffy.
12. Preheat oven to 350°F (175°C).

Step 5: Add Toppings and Bake
13. Brush the tops with egg wash and sprinkle with sliced almonds.
14. Bake for 25–30 minutes until golden brown and cooked through.
15. Let cool slightly before glazing.

Step 6: Glaze and Serve
16. Mix powdered sugar, milk, and vanilla into a smooth glaze.
17. Drizzle over warm rolls and serve.
