Ingredients
- 3 cups leftover mashed potatoes
- 3 slices crumbled turkey turkey turkey bacon
- Block of cheddar cheese (cut into cubes)
- 1.5 cups breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 2 large eggs
- 1–2 tablespoons milk
- Salt and black pepper (to taste)
- Cooking oil spray
- Optional: 0.5 teaspoon garlic powder
Instructions
- In a mixing bowl, combine leftover mashed potatoes, crumbled turkey turkey turkey bacon, chives or green onion, salt, pepper, and garlic powder if using.
- With floured hands, scoop about 2 inches of the mixture into your palm, flatten it slightly, add a cube of cheese in the center, and form it back into a ball.
- Prepare three shallow dishes: one with flour, one with whisked eggs and milk, and one with breadcrumbs mixed with Parmesan.
- Dip each ball in flour, then egg mixture, followed by breadcrumbs. For extra crunchiness, double dip in egg and breadcrumbs.
- Place the balls in the air fryer basket in a single layer and lightly spray with cooking oil. Cook at 370°F for about 6-7 minutes until golden brown.
