Ingredients

2 medium green tomatoes (firm and unripe)

½ cup all-purpose flour

2 large eggs

2 tbsp milk (any kind)

¾ cup panko breadcrumbs

¼ cup cornmeal
-
½ tsp garlic powder
-
½ tsp paprika

Salt and pepper to taste

Olive oil spray or cooking spray

Instructions
Step 1: Prep the Tomatoes

Slice green tomatoes into ½-inch thick rounds.

Pat dry with paper towels to remove excess moisture.

Lightly season with salt and pepper on both sides.
Step 2: Set Up the Breading Station

Bowl 1: Add flour.

Bowl 2: Beat the eggs with milk.

Bowl 3: Mix panko breadcrumbs, cornmeal, garlic powder, paprika, and a pinch of salt and pepper.
Step 3: Bread the Tomatoes

Dredge each tomato slice in flour (shake off excess).

Dip into the egg mixture to coat.

Press into the breadcrumb mixture until fully coated.

Place on a plate or tray while you finish the rest.
Step 4: Air Fry to Crispy Perfection
