Ingredients

  • 2 medium green tomatoes (firm and unripe)

  • ½ cup all-purpose flour

  • 2 large eggs

  • 2 tbsp milk (any kind)

  • ¾ cup panko breadcrumbs

  • ¼ cup cornmeal

  • ½ tsp garlic powder

  • ½ tsp paprika

  • Salt and pepper to taste

  • Olive oil spray or cooking spray

Optional for Serving:

  • Ranch dressing, remoulade, or spicy aioli

  • Chopped fresh herbs for garnish

  • Crumbled feta or goat cheese


Instructions

Step 1: Prep the Tomatoes

  1. Slice green tomatoes into ½-inch thick rounds.

  2. Pat dry with paper towels to remove excess moisture.

  3. Lightly season with salt and pepper on both sides.

Step 2: Set Up the Breading Station

  1. Bowl 1: Add flour.

  2. Bowl 2: Beat the eggs with milk.

  3. Bowl 3: Mix panko breadcrumbs, cornmeal, garlic powder, paprika, and a pinch of salt and pepper.

Step 3: Bread the Tomatoes

  1. Dredge each tomato slice in flour (shake off excess).

  2. Dip into the egg mixture to coat.

  3. Press into the breadcrumb mixture until fully coated.

  4. Place on a plate or tray while you finish the rest.

Step 4: Air Fry to Crispy Perfection

  1. Preheat your air fryer to 400°F (200°C) for 3-5 minutes.

  2. Spray the air fryer basket with olive oil spray.

  3. Place the tomato slices in a single layer in the basket (work in batches if needed).

  4. Spray the tops lightly with oil.

  5. Air fry for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.

Step 5: Serve Hot

  1. Remove and let cool slightly on a rack or paper towels.

  2. Serve immediately with your favorite dipping sauce and optional garnishes.

Use Firm, Unripe Tomatoes – They hold their shape and have that signature tang.
