Ingredients

1 ½ cups dried chickpeas (soaked overnight, do not use canned)

½ medium onion, roughly chopped

3 cloves garlic

1 cup fresh parsley, tightly packed

½ cup fresh cilantro, tightly packed

1 tsp ground cumin
-
1 tsp ground coriander
-
½ tsp baking powder
-
1 tsp salt
-
½ tsp black pepper
-
2–3 tbsp flour (chickpea or all-purpose, as needed)

Olive oil spray (for air frying)

Instructions
Step 1: Soak the Chickpeas

Add chickpeas to a large bowl and cover with plenty of water.

Soak overnight (8–12 hours). Drain and rinse before using.

Do not use canned chickpeas—they’re too soft and will fall apart.
Step 2: Prepare the Falafel Mixture

Add soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, pepper, and baking powder to a food processor.

Pulse until mixture is finely minced and holds together when pressed.

Add flour 1 tablespoon at a time until the mixture is cohesive.

Transfer to a bowl, cover, and refrigerate for 30–60 minutes to firm up.
Step 3: Shape the Falafel

Scoop mixture using a spoon or cookie scoop and form into 1 to 1½ inch balls or patties.

Set them on a tray or parchment paper while the air fryer preheats.
Step 4: Air Fry the Falafel

Preheat air fryer to 375°F (190°C).

Lightly spray the basket with olive oil.

Place falafel in a single layer, not touching.

Spray the tops with a light coating of oil.

Air fry for 12–15 minutes, flipping halfway, until golden and crisp.
Step 5: Serve and Enjoy
