  • 1 ½ cups dried chickpeas (soaked overnight, do not use canned)

  • ½ medium onion, roughly chopped

  • 3 cloves garlic

  • 1 cup fresh parsley, tightly packed

  • ½ cup fresh cilantro, tightly packed

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • ½ tsp baking powder

  • 1 tsp salt

  • ½ tsp black pepper

  • 23 tbsp flour (chickpea or all-purpose, as needed)

  • Olive oil spray (for air frying)

Optional for Serving:

  • Pita bread or lettuce wraps

  • Hummus, tahini sauce, or garlic yogurt sauce

  • Chopped cucumbers, tomatoes, red onion

  • Lemon wedges


Instructions

Step 1: Soak the Chickpeas

  1. Add chickpeas to a large bowl and cover with plenty of water.

  2. Soak overnight (8–12 hours). Drain and rinse before using.

  3. Do not use canned chickpeas—they’re too soft and will fall apart.

Step 2: Prepare the Falafel Mixture

  1. Add soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, pepper, and baking powder to a food processor.

  2. Pulse until mixture is finely minced and holds together when pressed.

  3. Add flour 1 tablespoon at a time until the mixture is cohesive.

  4. Transfer to a bowl, cover, and refrigerate for 30–60 minutes to firm up.

Step 3: Shape the Falafel

  1. Scoop mixture using a spoon or cookie scoop and form into 1 to 1½ inch balls or patties.

  2. Set them on a tray or parchment paper while the air fryer preheats.

Step 4: Air Fry the Falafel

  1. Preheat air fryer to 375°F (190°C).

  2. Lightly spray the basket with olive oil.

  3. Place falafel in a single layer, not touching.

  4. Spray the tops with a light coating of oil.

  5. Air fry for 12–15 minutes, flipping halfway, until golden and crisp.

Step 5: Serve and Enjoy

  1. Serve warm in pita, over salad, or in bowls.

  2. Add fresh veggies and your favorite sauce for a complete meal.

Notes

Use Dry Chickpeas – Essential for texture and structure.
Don’t Overmix – The mixture should be coarse, not a paste.
Chill the Mixture – Makes shaping easier and helps them hold together.
Cook in Batches – Avoid overcrowding the air fryer basket.
