Ingredients
-
1 medium eggplant
-
2 tbsp olive oil or avocado oil
-
½ cup breadcrumbs (panko or regular)
-
¼ cup grated Parmesan cheese (or dairy-free alternative)
-
1 tsp garlic powder
-
½ tsp paprika
-
½ tsp Italian seasoning
-
Salt and pepper to taste
-
Optional: 2 tbsp flour (for extra coating)
-
Optional: 1 egg or ¼ cup plant-based milk (for dipping)
Instructions
Step 1: Prep the Eggplant
-
Wash and slice the eggplant into ½-inch rounds or sticks, depending on your preference.
-
Lay the slices on paper towels, sprinkle with salt, and let them sit for 10-15 minutes to draw out moisture.
-
Pat dry with a paper towel—this step helps the eggplant crisp up better in the air fryer.
Step 2: Set Up Breading Stations
-
In one bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, Italian seasoning, salt, and pepper.
-
In another bowl, whisk an egg or pour plant-based milk.
-
Optional: Coat the eggplant slices lightly in flour before dipping for extra crunch.
Step 3: Coat the Eggplant
-
Dip each eggplant slice into the egg (or milk), then coat evenly in the breadcrumb mixture.
-
Press gently to help the coating stick.
-
Repeat for all pieces.
Step 4: Air Fry to Crispy Perfection
-
Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
-
Lightly spray or brush the air fryer basket with oil.
-
Arrange eggplant in a single layer (don’t overcrowd).
-
Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Step 5: Serve & Enjoy
-
Serve hot with your favorite dipping sauces—try marinara, ranch, or garlic aioli.
-
Sprinkle with fresh herbs or a pinch of sea salt for extra flavor.
Notes
Salt First – Helps reduce bitterness and improves texture.
Don’t Skip the Oil – A light brush or spray gives that signature crisp.
Use Panko – For a lighter, crunchier coating.
Cook in Batches – Overcrowding reduces air circulation and crispiness.
Add Spice – Mix in chili flakes or cayenne for a spicy twist.
