Ingredients
For the Chicken Marinade:

2½ lbs chicken (drumsticks, thighs, or boneless breasts)

¼ cup olive oil

Juice and zest of 2 lemons

4 cloves garlic, minced

1 tbsp Dijon mustard

1 tsp paprika

½ tsp dried oregano

½ tsp salt

¼ tsp black pepper
For the Lemon BBQ Sauce:

1 cup ketchup

2 tbsp lemon juice

1 tbsp apple cider vinegar

2 tbsp brown sugar
-
1 tbsp Dijon mustard

1 tsp garlic powder
-
½ tsp onion powder
-
½ tsp smoked paprika
-
Salt and pepper to taste
Optional Garnish:

Fresh parsley or chopped chives

Instructions
Step 1: Marinate the Chicken

In a large bowl, combine olive oil, lemon juice and zest, garlic, mustard, paprika, oregano, salt, and pepper.

Add chicken and toss to coat well. Cover and refrigerate for at least 1 hour or up to 8 hours.
Step 2: Make the Lemon BBQ Sauce
3. In a saucepan over medium heat, whisk together ketchup, lemon juice, vinegar, brown sugar, mustard, garlic powder, onion powder, and paprika.
4. Simmer for 8–10 minutes, stirring occasionally until thickened.
5. Season with salt and pepper to taste. Set aside to cool.
Step 3: Preheat the Grill
6. Heat your grill to medium-high. Oil the grates to prevent sticking.
7. Remove chicken from marinade and let excess drip off.
Step 4: Grill the Chicken
8. Place chicken on the grill and cook for 5–7 minutes per side, depending on thickness.
9. Brush with lemon BBQ sauce during the last few minutes of grilling, flipping and basting for a sticky glaze.
10. Use a thermometer to check for doneness (internal temp should be 165°F).
Step 5: Rest and Serve
11. Transfer grilled chicken to a platter and rest for 5 minutes under foil.
12. Garnish with fresh parsley and lemon slices before serving.
